The fruit was handpicked on 24th February from the high altitude Balmoral vineyard (900m) and gently pressed after six hours on skins to extract colour and tannin. A long, cool ferment preserved its fragrant aromatics, followed by five months on lees for added complexity. Colour Light watermelon pink. Aroma Strawberry leaf, red cherry, and a hint of pink peppercorn.
